I'm seriously impressed with how well this skillet holds heat after searing—brought a steak to a perfect crust without any hot spots. The shiso green color is gorgeous and looks great sitting out on the stove.
The heat distribution is incredibly even; I made pancakes with zero hot spots and they came out perfectly golden. Cleanup was surprisingly easy too, just a quick wipe after deglazing with some broth.
